Madeeda Hilba Recipe

Origin: Sudan      Period: Traditional

Ingredients

120ml of vegetable oil or butter
2 tsp ground fenugreek (hilba)
1 tsp salt
1 tsp baking soda
350g flour
500 milk
180g sugar
water

Madeeda Hilba Preparation:


Method:

Add a little oil to a pan and use to fry the fenugreek until aromatic (about 2 minutes). Add the salt and 700ml water then cover and cook for about 10 minutes before adding the milk and sugar.

Mix the flour with 500ml water and stir vigourously into the milk mixture until the liquid thickens (about 5 minutes).

Mix the baking soda with 80ml water and add to the pot (this will turn the milk yellow). Cover and simmer for about 5 minutes, stirring occasionally.

Tip into a serving bowl and eat warm.
