Madammas Aljazar Recipe

Origin: Libya      Period: Traditional

Ingredients:

5 medium potatoes
3 carrots
2 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, minced
1 tsp ground coriander seeds (kosbor)
1 tsp ground caraway seeds (krawiya)
salt and chilli powder, to taste
4 tbsp coriander, chopped
6 black olives, chopped

Madammas Aljazar Preparation:


Method:

Peel and dice the potato then peel, and dice the carrots. Combine in a saucepan with 300ml water and a little salt. Bring to a boil, reduce to a simmer and cook for about 20 minutes, or until the potatoes are tender. Drain, return to the pan and mash.

Add the remaining ingredients (except the coriander and olives) then mix thoroughly to combine. Turn the potato mash in to a bowl and garnish wit the coriander and olives.
