(Swallow Nests From Lubeck) Recipe

Ingredients:

4 veal cutlets (about 150g each)
125g raw ham cut into thin slices
4 eggs
100g plain flour
1 tbsp butter
1 tsp of white pepper
2 tsp cornflour (cornstarch)
300ml water

(Swallow Nests From Lubeck) Preparation:


Method:

Place the eggs in a pan of boiling water and cook for about 8 minutes, or until hard boiled. Remove with a slotted spoon and set aside to cool.

Place the veal cutlets between two sheets of clingfilm (plastic wrap) and pound out until flat. Cover each veal cutlet with ham then peel the eggs and place in the centre. Roll the veal and ham around the eggs so you have four cylinders (the nests) with eggs in the centre. Secure with a toothpick then roll in the flour to coat evenly.

Heat the butter in a pan then add the veal rolls and fry until browned on all sides. Add the water and stir to combine. Bring to a simmer and cook the mixture for about 30 minutes, or until cooked through.

Take the veal-wrapped eggs (swallow nests) out then mix the cornflour with 4 tbsp water to a smooth slurry and add to the sauce in the pan. Bring to a simmer and cook until the sauce thickens. Arrange the swallow nests on a serving plate and pour the sauce over them. Serve with mashed potatoes and steamed vegetables.
