Low Calorie Irish Colcannon Recipe

Origin: Ireland      Period: Traditional

Ingredients:

100ml water
1 tbsp reduced calorie margarine
1/4 tsp salt
400g cabbage, chopped
80ml skim (or 1%) milk
200g hot, boiled, potatoes, mashed
1 spring onion, finely chopped

Low Calorie Irish Colcannon Preparation:


Method:

Combine the water, margarine and salt in a medium saucepan. Bring the mixture to a boil then stir-in the cabbage. Return to a boil then reduce the heat, cover and simmmer for about 6 minutes, or until the cabbage is tender.

Remove from the heat then stir in the milk and potatoes along with the spring onion. Beat until smooth then cover and allow to stand for 3 minutes. Return to the stove, allow to heat through gently and serve.
