(Green Beans with Almonds) Recipe

Origin: Algeria      Period: Traditional

Ingredients

450g fine (green) beans, cleaned and trimmed
1l water, salted
3 tbsp groundnut oil
1 garlic clove, crushed
½ tsp ground cumin
¼ tsp paprika
¼ tsp ground cloves
1 tbsp slivered almonds

(Green Beans with Almonds) Preparation:


Method:

Simmer the green beans in the salted water until just tender (about 30 minutes) then drain and put in a warm serving dish. Add all the remaining ingredients (except the almonds) in a saucepan and cook over medium heat for two minutes, stirring constantly. Add the almonds and stir briefly to coat them in the sauce. Pour the mixture over the green beans and toss gently to coat them in the oil. Serve immediately.
