Lois' Irish Stew Recipe

Origin: Ireland      Period: Traditional

Ingredients:

900g lamb, cut in 3cm cubes
450g potatoes, peeled and cubed
450g carrots, peeled and sliced
450g onions, quartered and sliced
2 bay leaves
1/2 tsp dried oregano, crumbled
1/2 tsp dried thyme, crushed
1/2 tsp dried rosemary, crushed

Lois' Irish Stew Preparation:


Method:

Place the lamb in a large pan, cover with water and bring to a boil. Cook for 15 minutes then drain and pat the meat dry. Combine the meat and vegetables in a large heat-proof casserole then tie the herbs in a bag and add to the mix.

Add enough water to just cover the mixture then bring to a simmer, cover and cook for 90 minutes, or until the meat is tender. Remove the bag of herbs and serve.
