Lissanoure
(Lemon Tea-cake) Recipe

Origin: Northern Ireland      Period: Traditional

This is a classic lemon-flavoured tea-cake named after Lissanoure castle in County Antrim, Northern Ireland (it's a traditional recipe from a nearby country house). It should be eaten hot and slathered in butter.

Ingredients:

2 eggs, seprated
butter, weight equivalent to the eggs
caster sugar, weight equivalent to the eggs
self-raising flour, weight equivalent to the eggs
juice of 1 lemon
freshly-grated zest of 1 lemon

(Lemon Tea-cake) Preparation:


Method:

Cream together the butter and sugar until light and fluffy then add the egg yolk, lemon zest, lemon juice and 2 tbsp of the flour (to prevent curdling). Beat until thoroughly combined then add the egg whites to a clean and dry bowl and beat until firm and frothy before folding into the egg yolk and butter mixture, along with the remaining flour.

Turn immediately into a shallow greased and floured tin and transfer to an oven pre-heated to 175°C. Bake for about 25 minutes, or until golden brown and cooked through (a skewer inserted into the centre of the cake will emerge cleanly). Turn out of the tin, split whilst still hot and butter lavishly before serving.
