Linden Schnapps is a traditional German method of flavouring alcohol with linden (common lime) blossoms. The original recipe calls for fresh flower buds from the small-leaved linden tree Tilia cordata, but I've adapted the recipe for the flowers of the Common European Linden, Tilia x europa which is far more common and no less tasty. For this to work best you need to pick the flowers just before they're in full bloom, but just after the fragrance of the tree begins to develop. It's best if you can pick the flowers dry from the tree. If, however, they are wet, place them in a dark spot on plenty of paper towels to dry naturally. Ingredients:

Linden Schnapps Preparation:Method:Use the flowers to fill a clean glass jar with a tight-fitting lid. Add the sugar and top-up with the vodka. Set aside in a dark place at room temperature (about 18ȃ20°C) and leave to steep for about 3 days. At least twice a day, as you pass, invert the bottle to mix the contents. After the third day taste the mixture then strain and transfer the liquid into a clean bottle. Stopper or seal tightly and set aside for at least 4 days to age. If stored in a cool, dark, cupboard it will keep for up to a year. It's drinkable even after this time, but the colours and tastes will tend to fade. |
