Liberian Sweet Potato Cookies Recipe

Origin: Liberia      Period: Traditional

Versions of these sweet potato cookies (or biscuits) are known in many countries in Africa and they are also popular in the American south. This version has the usual Liberian twist of the inclusion of cinnamon and lots of fresh ginger. This recipe is based on one of my wife's traditional family recipes, learnt from her grandmother.

Ingredients:

180g mashed sweet potato
150g sugar
1 egg
150g margarine
300g sifted flour
2 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1/2 tsp finely-ground black pepper
4 tsp freshly-grated ginger

Liberian Sweet Potato Cookies Preparation:


Method:

Cream together the margarine and sugar until light and fluffy then add the egg and beat until thoroughly combined. Now add all the remaining ingredients and beat to mix thoroughly.

Bring the mixture together to form a dough then tip onto a floured surface, knead and roll out until it's just over 1cm thick. Cut with a pastry cutter then place on a well-greased baking tray. Place in an oven pre-heated to 160°C and bake for 30 minutes, or until golden. Remove from the oven, dust with icing sugar and set aside to cool.
