Liberian Rice Bread II Recipe

Origin: Liberia      Period: Traditional

Ingredients

450g Cream of Rice cereal
650g mashed bananas
120ml vegetable oil
4 tbsp sugar
1/2 tsp freshly-grated nutmeg
1 tsp salt
240ml water
1 tsp baking soda

Liberian Rice Bread II Preparation:


Method:

Simply mix all the ingredients together thoroughly in a large bowl. Tip the resultant dough into a well greasd rectangular cake tin (about 20cm x 30cm) and bake in an ove pre-heated to 200°C for about 30 mintes, or until a skewer inserted into the centre of the bread emerges clean.

This bread is traditionally used as either an accompaniemt to coffe or as a bread. It is very versatile and will remain moist for a full week.
