Liberian Carrot Cake Recipe

Origin: Liberia      Period: Traditional

Ingredients:

400g sugar
400g plain flour
3 tsp salt
2 tsp cinnamon
1 tsp baking soda
80ml vegetable oil
4 eggs, beaten
400g finely-grated carrots

Liberian Carrot Cake Preparation:


Method:

Sift the sald, baking soda and flour together then add the sugar and oil. Mix well then add the beaten eggs and carrots. Mix thoroughly and tip into a well-greased springform cake tin. Place in an oven pre-heated to 170°C and bake for about 30 minutes or until a toothpick placed in the centre of the cake comes out clean.
