Letcho with Mushrooms Recipe

Origin: Czech      Period: Traditional

Ingredients

360g fresh mushrooms, sliced
65g butter
1 small onion, finely chopped
1 small green bell pepper, finely chopped
salt and freshly-ground black pepper, to taste
2 large tomatoes, finely chopped
5 large eggs


Letcho with Mushrooms Preparation:


Method:

Melt the butter in a pan and use to fry the onion, mushrooms and bell pepper for about 8 minutes, or until the onions are soft. Season to taste with salt and black pepper then stir-in the tomatoes, bring to a simmer and cook for 5 minutes.

Beat the eggs in a bowl and pour over the top of the contents of the pan. Stir to combine then allow the eggs to cook until set. Cut into quarters and serve with sourdough bread.
