(Orange Shortbread Biscuits) Recipe

Origin: South Africa      Period: Traditional

Ingredients

For the Dough

500g flour
2 tbsp baking powder
1/2 tsp salt
120g vegetable shortening
200g sugar
1 egg
2 tsp grated orange zest
120ml orange juice

For the Icing

400g sifted icing sugar
120ml molten butter
1 tsp grated orange zest
60ml orange juice

(Orange Shortbread Biscuits) Preparation:


Method:

For the dough sift the flour, baking powder and salt together. Beat the shortening until light and creamy then add the sugar and beat into the fat. Add the egg and orange peel to the sugar mixture and beat in well. Now add the dry ingredients alternately with the orange juice. Mix well then place the bowl in the refrigerator and chill until the dough is stiff enough to handle (about 1.5 hours).

Tip the dough onto a floured surface and roll to 0.6cm thick. Cut into rounds with a 5cm pastry cutter then place on an oiled baking tray and place in an oven pre-heated to 180°C for about 8 minutes until done.

Whilst the biscuits are baking prepare the icing by mixing all the ingredients together until smooth. When the biscuits are cooked allow to cool then coat with the icing and decorate with a piece of candied orange peel.
