IngredientsThis is a very simple condiment/spice blend to make (note that dried citrus peel is a slice) but it's often not available in my local store so I came up with this recipe to make my own.
1 lemon
Lemon Pepper Seasoning Preparation:Method:Using a zester or vegetable peeler, very carefully pare the yellow zest from the lemon (avoid as much of the white pith as you can). Chop the zest as finely as you can then set aside. Add the black peppercorns to a mortar and crush lightly. Now add the lemon zest and mash the zest and black peppercorns together (the peppercorns abrade the zest and help release th flavoursome lemon oils). Spread the mixture evenly on a small non-stick baking tray then place in an oven pre-heated to 80°C and allow to dry out over night. Allow to cool then grind to a coarse powder in a spice or coffee grinder. Store in an air-tight jar and use to season your chicken, fish or pork. |
