(Leek and Beef Stew) Recipe

Origin: Libya      Period: Traditional

Ingredients

4 large leeks, finely chopped
60ml olive oil
1 large onion, finely chopped
60ml tomato paste
120ml water
1/8 tsp chilli flakes
1/2 tsp black pepper
1 tsp salt
700ml water
1.4 kg beef, cubed
3 sticks cinnamon
900ml potatoes (Santé is good)
450g green peas (fresh or frozen)

(Leek and Beef Stew) Preparation:


Method:

Heat the oil in a large pan. Add the leeks and onions and fry until just transparent (about 5 minutes). Mix the tomato paste with 120ml water and add this along with the chilli flakes, black pepper and salt. Bring to the boil and cook for 3 minutes then add the remaining water then arrange the meat and cinnamon sticks in the pot. Bring back to the boil, then reduce to a simmer, cover and cook for 45 minutes. Add the potatoes and simmer for a further 30 minutes. Add the peas and cook for a further 15 minutes.

Serve immediately with rice or bread.
