Ladolemno
(Oil and Lemon Dressing) Recipe

Origin: Greece      Period: Traditional

This is the recipe for the lemon juice-based vinaigrette dressing that is a feature of Greek cuisine.

Ingredients:

120ml olive oil
juice of 1 lemon
salt and freshly-ground black pepper

Options:
1 tsp dry oregano, crumbled and/or 1 tsp finely chopped fresh flat-leaf parsley
1/2 tsp mustard powder

Method:

Combine all the ingredients in a glass screw-top jar. Secure the lid firmly and shake vigourously to emulsify. Use as a dressing for fish and salads.

As variations the basic dressing can be flavoured with dried oregano and/or fresh parsley or with mustard powder prior to use.
