Kufta
(Libyan Kofta) Recipe

Origin: Libya      Period: Traditional

Ingredients:

225g minced meat (beef or lamb)
3 tsp baking powder
1 tsp kammon hoot
1 bunch coriander, leaves only, chopped
1 tsp salt
1/2 tsp black pepper
1/2 tsp hot chilli powder
2 tsp garlic, minced
2 eggs, beaten

For frying:
1 egg, beaten
2 tbsp water
flour for coating
oil for frying

Kufta
(Libyan Kofta) Preparation:


Method:

Combine all the ingredients for the patties in a bowl and use your hands to bring the mixture together into a solid mass. Form patties or sausage shapes and place these in the refrigerator for 30 minutes to set.

When ready to cook whisk together the egg and water in a bowl. Dip the kufta in the egg mixture then roll in the flour to coat. Heat oil in a frying pan and use to fry the kufta until golden brown and cooked through (about 5 minutes per side). Serve with faltbread and a side salad.
