Kubecake Recipe

Origin: Ghana      Period: Traditional

Ingredients

450g coconut (grated)
2.5cm length of ginger, grated
200ml dark rum
300g brown sugar

Kubecake Preparation:


Method:

Mix all the ingredients except the sugar and place in an oven pre-heated to 40°C to keep warm. Meanwhile melt the sugar in a saucepan until it turns brown on the edges and stir with a wooden spoon until smooth. Pour the coconut rum mixture and stir vigourously until blended completely.

Remove from the heat and allow to cool for 30 minutes. Form into small balls with your hands and refrigerate for about 2 hours before serving.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
