This dish is based on a Marathi original, is very easy to make (and very tasty!). Ingredients
4 whole mackerel, cleaned and with heads removed
Kokam Fish Preparation:Method:Toast the coriander seeds in a dry frying pan until lightly coloured and aromatic. Grind to a paste in a pestle and mortar or a coffee grinder. Mix with the garlic, chilli powder, turmeric and salt. Add oil to your frying pan and fry the spice mixture for about 1 minute then add the fish and some 100ml of water. Add the kokam pieces (or substitute tamarind paste) and cook until the fish is done al the way through. Serve as soon as the fish is done with boiled aromatic rice. |
