Kizaka Peantu Stew
(Kizaka Peanut Stew) Recipe

Origin: Angola      Period: traditional

Ingredients:

Kizaka is the Angolan Portuguese name for cassava greens and this recipe is for a classic palm oil stew of these greens

1kg shredded cassava leaves (substitute strongly-flavoured greens if not available)
250ml smooth peanut butter
200g peanuts, finely chopped in a food processor
1 hot habanero chilli
225g dried prawns (or cooked and peeled fresh prawns if you cannot obtain these)
salt, to taste

(Kizaka Peanut Stew) Preparation:


Method:

Add the leaves to a pan, cover with water and boil half-covered for about 1 hour. When ready, drain.

Whisk the peanut butter with 250ml water then add to a pan along with the chopped peanuts, the greens and he chilli. Bring to a boil and add the dried prawns. Season to taste then add enough water to cover. Bring to a boil, reduce to a simmer and cook, partially covered, until the water has reduced and the dish is almost dry (add cooked prawns about 10 minutes before serving). Serve over plain rice or with Funje.
