Khimais Twaira
(Five Brids Snack) Recipe

Origin: Sudan      Period: Traditional

This is a traditional traveller's food, most common to the Western Sudan that's made dry and moistened into a dough with a little water before being eaten. The name literally means 'five birds' for the five ingredinents that go into making this dry snack.

Ingredients:

50g millet flour
50g malted millet flour
75g sesame seeds (or chopped peanuts)
80g sugar
salt, to taste

Method:

Combine all the ingredients in a bowl and store in a jar until needed. Add just enough water to bring the ingredients together and eat.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
