Khalyat Alkadba wal Gholoob
(Fried Liver and Heart) Recipe

Origin: Libya      Period: Traditional

Ingredients:

300g lamb's liver
2 lamb's hearts
3 tbsp butter
120ml olive oil
2 tbsp tomato purée
1 tsp bzaar
1/2 tsp Hararat (Libyan five-spice)
1/4 tsp hot chilli powder

Khalyat Alkadba wal Gholoob
(Fried Liver and Heart) Preparation:


Method:

Slice the liver into thin strips. Open the heart, remove the valves then cut into thin strips. Add the liver and heart to a frying pan and cook gently (without oil) until the meat releases its juices and becomes almost dry.

Add the butter, oil, spices and tomato purée then bring to a simmer and cook gently for about 20 minutes, until the meat is tender and cooked through. Serve on a bed of rice, garnished with chopped coriander.
