Kerrieboontjies
(Curried Beans) Recipe

Origin: South Africa      Period: Traditional

Ingredients:

3 onions, thinly sliced
3 tbsp olive oil
900g lamb, cubed
salt and black pepper, to taste
1 green chilli, crushed
2 garlic cloves, minced
1 tsp curry powder
900g cooked beans (any will do)
lemon juice, to taste

(Curried Beans) Preparation:


Method:

Add the onion and oli to a large stewing pot and cook until the onion has bowned. Add the meat, season with salt and pepper and continue to cook for 20 minutes, until the meat is brown on all sides. Add the chilli and garlic to the pot. Allow to simmer until the meat is tender (adding water as mecessary) then add the bens about 15 minutes before serving. Transfer the curry to a serving dish and drizzle with lemon juice.
