(Pilaf with Orzo) Recipe

Origin: Turkey      Period: Traditional

Ingredients

1l milk
150g sugar
1 tbsp cornflour (cornstarch)
3 tbsp rice flour
120ml water
45g cocoa powder
12 tea biscuits, halved

(Pilaf with Orzo) Preparation:


Method:

Combine the rice flour and cornflour. Add about 5 tbsp water and stir to a slurry. Add the remaining water to a pot then stir-in the cornflour slurry. Bring to a simmer and cook until the liquid clears then stir-in the sugar, cocoa and milk. Cook, stirring constantly, on medium-high heat until you see bubbles beginning to form on the surface of the liquid. Continue cooking for 1 minute more beyond this point, stirring continually.

Add 4 tea biscuit halves to 6 serving bowls then divide the chocolate mixture between the bowls. Allow to cool then place in the refrigerator and chill for at least 2 hours before serving.
