Kayisili Kuskus
(Apricot Couscous) Recipe

Origin: Turkey      Period: Traditional

Ingredients

100g couscous
1 small onion, chopped
2 tbsp extra virgin olive oil
240ml hot water
3 dried apricots, soaked over night in warm water, drained and chopped
2 tbsp pistachio nuts
2 tbsp slivered almonds
1 tsp dried mint, crumbled
salt and black pepper, to taste

(Apricot Couscous) Preparation:


Method:

Fry the onion in the olive oil until softened (about 6 minutes) then add the couscous and fry for a further 3 minutes before stirring-in the water and adding the apricots. Season with salt and pepper, bring to a simmer and cook gently for about 8 minutes. Take off the heat and cover with a lid then set aside for 20 minutes.

By the end of this time the couscous will have swollen and all the water will have been absorbed. Fluff with a fork and stir-in the nuts and mint. Serve warm.
