Karvarma-Kebap ot Sinsko Meso
(Pork in Tomato Sauce) Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

900g pork, cubed
3 tbsp olive oil
4 large leeks, chopped
salt and freshly-ground black pepper, to taste
200g tomato purée
1 tsp paprika
120ml water
1 small onion, chopped
1 small red chilli, chopped
2 tbsp fresh parsley, chopped

Karvarma-Kebap ot Sinsko Meso
(Pork in Tomato Sauce) Preparation:


Method:

Heat the oil in a pan and use to fry the meat until well browned. Add the leeks and fry for a further 3 minutes before seasoning with salt and black pepper. Stir-in the paprika and tomato purée then fry for a further 2 minutes.

Now add the water and wine. Bring the mixture to a simmer and cook for 45 minutes. Serve on a bed of rice, garnished with the onion, chilli and parsley.
