Kale with Cream Recipe

Origin: Ireland      Period: Traditional

Ingredients:

800g Kale
2 tbsp Butter
2 tbsp double cream
pinch of freshly-grated nutmeg
salt and freshly-ground black pepper, to taste
2 tbsp stock

Kale with Cream Preparation:


Method:

Thorughly wash the kale to remove any dirt then strip the leaves from the staklk. Bring a pan of saltd water to a brisk boil then plunge the kale into this and boil for about 25 minutes, or until tender. Drain well and chop finely.

In a saucepan, combine the butter, cream, and pinches of nutmeg, salt and black pepper. Add the kale and the stock and mix thoroughly. Continue cooking until heathed through and the sauce is slightly thickened. Serve hot.
