(Almond Bracelets) Recipe

Origin: Egypt      Period: Traditional

Almond bracelets are traditional biscuits (cookies) that are typically served at engagement and wedding parties in the Middle East. This version of the recipe comes from Egypt.

Ingredients:

1.2kg ground almonds
500g icing sugar
1 egg white, stiffly beaten
orange blossom water
blanched almonds, to decorate

(Almond Bracelets) Preparation:


Method:

Combine the almonds and sugar in a bowl then fold in the egg white. Now add just enough orange blossom water to bring the mixture together as a firm, dry, paste.

Turn the paste onto a cold pastry board and knead well. This releases the oils from the almonds and makes the dough more pliable and easier to work. Once it's fairly easy to work roll the past into thin sausage shapes about 12cm long. Bring the ends of these sausages together and join so that you form bracelets about the diameter of a napkin ring (between 3 and 4cm in diameter).

Decorate each bracelet with a few blanched almonds then carefully transfer to a baking tray lined with baking parchment. Transfer to an oven pre-heated to 200°C and bake for about 10 minutes. You want the biscuits to be cooked through, but not to have coloured at all.

Remove from the oven and allow to cool then carefully take off the baking paper.
