Kafta de Sardine Grillé
(Grilled Sardine Kofta) Recipe

Origin: Algeria      Period: Traditional

Ingredients:

2kg sardines
300g mutton fat, finely chopped
1 bunch parsley, finely chopped
3 onions, finely chopped
2 tsp sweet paprika
1 tsp freshly-ground black pepper
1/2 tsp ground cumin
1/4 tsp hot chilli powder
1/4 tsp ground ginger
sea salt, to taste

Kafta de Sardine Grillé
(Grilled Sardine Kofta) Preparation:


Method:

Clean and gut the sardines then remove the skins and all the bones (best done by laying the sardines on their bellies and hitting the backs of the fish smartly with the flat of your hand; this will open then up, allowing you to remove the bones). Mince the fish meat in a blender or by passing through a food mill.

Turn the fish meat into a bowl and combine with the mutton fat, chopped parsley, onions, spices and salt. Use your hands to knead the mixture until the ingredients are thoroughly combined and form a smooth paste.

Shape the mixture into balls and flatten gently with your hands. Cook on a barbecue (or hot grill [broiler]) until nicely browned and cooked through. Serve immediately with a yoghurt and mint dipping sauce.
