Ingredients

200g dry split peas
1 medium onion, chopped
1 tbsp corn oil
1 tbsp tomato purée
2 tsp Chow
1/2 tsp salt

(Ethiopian Green Pea Soup) Preparation:


Method:

Add the peas to a pan containing about 850ml water and cook over low heat for about 40 minutes, or until the peas are soft and the water has almost completely evaporated. When done, set aside to cool.

Meanwhile stir-fry the onions for 2 minutes in a dry pan then add the oil and stir-fry for 2 more minutes. Add 120ml water along with the tomato purée, cow and salt and continue to stir as you bring the mix to a simmer. Add the split peas and mix well over moderate heat for about 3 minutes, until the peas have heated through and the mixture has rendered down to a thick purée.

Serve warm with Injeera as an accompaniment.
