Kaak Lebi Hilw
(Orange and Cumin Biscuits) Recipe

Origin: Libya      Period: Traditional

Ingredients:

2 eggs
200g sugar
240ml oil
240ml orange juice
2 tsp baking powder
700g flour
2 tbsp roast and ground sesame seeds (tahini)
1/2 tsp crushed fennel seeds (kammon kaak or sweet cumin)
caster sugar to decorate

(Orange and Cumin Biscuits) Preparation:


Method:

Cream together the sugar and eggs then whisk-in the oil and orange juice and tahini. Sift in the flour and baking powder then bring together as a stiff dough. Turn the mixture onto a lightly-floured work surface and roll out to about 6mm thick. Cut into ka'ak shapes (typically crescents), transfer to a lightly-greased baking tray then place in an oven pre-heated to 180°C and bake for about 15 minutes, or until a light golden brown. Remove from the oven, sprinkle a little caster sugar over the top then transfer to a wire rack to cool completely. Serve with tea.
