Origin: Sudan      Period: Traditional

Ingredients:

1/2 cucumber, finely chopped
3 tomatoes, finely chopped
rocket leaves, chopped
2 spring onions, finely chopped
100g feta cheese, finely cubed (jibna)
pinch of salt.

Jibna Salata Preparation:


Method:

Mix all the ingredients together, add the salt and toss to combine. Serve as a side dish to accompany any Sudanese stew.
