Ingredients:
180g raisins
Islay Loaf Preparation:Method:Add the raisins, sugar, water, golden syrup and butter to a pan. Bring to a boil and cook for 2 minutes then take off the heat and allow to cool completely. Once cold fold-in the flour, baking soda, mixed spice and walnuts. Turn into a greased and lined 20cm round cake tin. Level the top then place in an oven pre-heated to 180°C and bake for about 60 minutes, or until the top is golden brown and firm to the touch and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool for 10 minutes in the tin then turn out onto a wire rack to cool completely. |
