Ingredients:
6 medium potatoes, peeled and thinly sliced
Irish Hot Pot Preparation:Method:Layer the potatoes in the base of a buttered 4l casserold dish then layer the onions on top, followed by the carrots. Season each layer as you finish them with salt and black pepper. Sprinkle the rice over the top then pour in the peas (along with their liquid). Finally, top with the sausages then pour the soup over everything. Transfer to an oven pre-heated to 180°C and bake, uncovered, for 60 minutes. At this time turn the sausages then return to the oven and bake for a further hour. Serve hot. |
