Irio Recipe

Origin: Kenya      Period: Traditional

This is a Kenyan dish of mashed potatoes with beans and sweetcorn.

Ingredients:

200g dried peas
6 large potatoes, chopped
6 ears of fresh maize with the corn removed from the cob (or 450g tinned sweetcorn)
250g mixed greens or spinach
1 chopped onion, fried until soft
200g lima beans

Irio Preparation:


Method:

Soak the peas and lima beans over night then drain, place in a large pot and cover with water. Bring to a boil and boil for about 1 hours or until nearly tender, then drain off most of the water (leaving only enough to boil the other ingredients for about 30 minutes)

Add the potatoes, corn, greens and onions and simmer gently until tender (about 30 minutes). Once all the ingredients are tender mash with a potato masher until the mixture is thick and well combined.

Traditionally this is served with roast or grilled meats.
