Ila
(Okra) Recipe

Origin: Nigeria      Period: Traditional

Ila is the Nigerian for okra. However, this okra paste is common to much of West Africa and my wife (who is Liberain) also makes a variant of this.

Ingredients

10 to 12 whole okra, finely sliced into rings

(Okra) Preparation:


Method:

Place the okra in a pot and add just enough water to completely cover it. Bring to a simmer and cook for about 15 minutes. You will end-up with a thick mucilaginous paste. This can be used as an accompaniment to Ate or Eba or it can be stirred into plain boiled rice.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
