Hummus bi Tahina
(Hummus with Tahini) Recipe

Origin: Arabic      Period: Traditional

Ingredients:

280g chick peas
220g tahini
240ml reserved chick pea cooking water
240ml freshly squeezed lemon juice
3 cloves of garlic, minced
1/2 tsp salt
Paprika or hot red chilli powder
cumin and olive oil

Hummus bi Tahina
(Hummus with Tahini) Preparation:


Method:

Soak the cleaned chick peas over night in sufficient water to cover. Pour the contents of the soaking bowl (water and chickpeas) into a saucepan and cook until tender. Reserve about 240ml of cooking water and 100g of drained beans. Put the remaining drained beans in a food processors or mash with a potato masher. Add the tahini and mix well. Stir in the reserved of cooking water, lemon juice, garlic and salt. If the hummus seems too thick, slowly add water until you have the consistency that you like.

Pour into flat bowl, decorate with reserved beans, drizzle with olive oil, and sprinkle with cumin and paprika or red chilli powder. Serve with fresh Pita bread.
