This is a light but spicy barbecue rub that imparts a wonderful red colour to foods. It can also be used as a spicy addition to soups, vegetable dishes and even bread and pizza mixes. The addition of annatto seeds gives the spice a very strong red colour which it imparts to the food it's cooked with. Ingredients:
1 tsp paprika
Hot, Red Barbecue Rub Preparation:Method:To make this rub simply add all the ingredients to a spice grinder or coffee blender and blend to a fine powder (this may take a while as the annatto seeds are very hard. This makes an excellent rub for chicken, pork and fish that you are going to barbecue or grill. (Use the salt-less version for beef.) If, however, you want to use the rub on roast pork then mix 1 part of the rub with 2 parts of honey and brush over the pork. |
