Hortobagyi Urgulyas
(Mutton Goulash) Recipe

Origin: Hungary      Period: Traditional

Ingredients

900g mutton, cubed
2 ripe tomatoes, chopped
2 medium green bell peppers, chopped
450g potatoes, chopped
4 tsp olive oil
2 large onions, chopped
2 garlic cloves, chopped
1/2 tsp caraway seeds, lightly crushed
1 tbsp paprika
salt and freshly-ground black pepper, to taste
190ml dry red wine


Hortobagyi Urgulyas
(Mutton Goulash) Preparation:


Method:

Heat the oil in a pan and use to fry the mutton until well browned. Add the onions, garlic and bell peppers and fry for a further 5 minutes. Now season with the caraway seeds, paprika, salt and black pepper. Pour over just enough water to cover the contents of the pan and bring to a simmer. Cover and cook for 1 hour, or until the meat is completely tender.

Stir-in all the remaining ingredients and return the stew to a simmer. Cover and cook for 30 minutes then serve hot.
