Ingredients:
900g pork
Home-made Sausage with Garlic Preparation:Method:Run the pork meat and half the salt pork through a meat mincer with a coarse plate into a bowl. Now runn the remaining salt pork through the fine plate of the mincer. Mix the ground meat together with the salt pork then grind the garlic and add to the mixture along with the cracked black peppercorns. and the salt. Stuff the mixture into sausage casings, tie off then refrigerate for between 5 and 6 hours. To cook fry the sausages in a little fat. If you want to store the sausages for a prolongued time, place the sausages in a non-reative bowl (glass, enamelled or ceramic) then melt enough lard to cover and pour over the top. Allow to cool and store in your larder. |
