Ingredients:
80ml vegetable oil
Highland Toffee Preparation:Method:In a large bowl combine the vegetable oil and oats. Mix-in the brown sugar, corn syrup, salt and vanilla. Tip the mixture into a generously greased 20cm tin and press down to cover the base. Place in an oven pre-heated to 200°C and bake for 12 minutes. Take out of the oven and set aside to cool. Once cold cut into 4 large squares and remove from the pan. Melt the chocolate in a bain-marie (double boiler) and use the melted chocolate to cover the squares. Sprinkle the nuts over the top then allow the chocolate to cool and set before cutting each square into 9 pieces. Store in an air-tight box. |
