(Delicious Pudding) Recipe

Origin: South Africa      Period: Traditional

Ingredients

For the Pudding

200g plain (all-purpose) flour
240g milk
1 tsp baking powder
1 tsp bicarbonate of soda
2 tbsp apricot jam
100g granulated sugar
1 tbsp vinegar
1 egg
pinch of salt

For the Syrup

120ml boiling water
240ml milk
1 tsp vanilla extract
150g granulated sugar
2 tbsp butter

(Delicious Pudding) Preparation:


Method:

Beat the egg and sugar together then add all the remaining ingredients, except the milk. Mix well then add the milk and beat together. Don't worry if the mixture looks very liquid. Pour into a deep ceramic casserole dish and place in the centre of an oven pre-heated to 180°C and bake for an hour.

Just before the hour is up prepare the syrup by adding all the ingredients to a saucepan and bringing to the boil. Pour over the pudding just as it's coming out of the oven. Leave to stand for a few minutes so the pudding absorbs the syrup then serve with custard or vanilla ice cream.
