(Salad with Parmesan Cheese) Recipe

Origin: Morocco      Period: Traditional

Traditionally this soup is served hot as part of breakfast to accompany lamb's heads. However it also makes and excellent and refreshing chilled summer soup.

Ingredients:

6 tbsp plain flour
1/4 tsp mastic
5 sprigs of mint
1 1/2 tbsp caraway seeds, ground
juice of 1 lemon
sea salt, to taste
lemon wedges, to serve

(Salad with Parmesan Cheese) Preparation:


Method:

Add 2l water to a large pan, bring to a boil then take off the heat. Meanwhile, combine the flour and mastic in a bowl and whisk to a smooth paste with 300ml cold water. Pour this mixture slowly into the hot water, whisking all the while ensuring that the final mixture is smooth and free of lumps.

Return the pot to the heat and bring back to a boil, stirring constantly. Add the mint, caraway seeds and season with salt, to taste. Lower to a simmer and cook gently for 15 minutes, stirring frequently.

Take off the heat then stir-in the lemon juice and adjust the seasoning. Either serve immediately or allow to cool and chill in the refrigerator for at least 2 hours before serving. Garnish with lemon wedges on the side.
