Ground Elder Omelette Recipe

Origin: Fusion      Period: Modern

Ground elder is a very common woodland plant, but not one that many people think is edible. In fact the young, bright green, shoots of ground elder make a very tasty vegetable.

Ingredients

10 young Ground elder shoots
4 eggs
A little butter
Salt and black pepper to taste

Ground Elder Omelette Preparation:


Method:

Wash and drain the ground elder shoots. Melt a little butter in a frying pan and use this to wilt the ground elder shoots.

Beat the eggs, season them with salt and pepper, and add them to the pan. Cook for a minute or two, before putting the pan under the grill to finish off (or, alternatively, flip the omelette over).

Serve with crusty bread as a light lunch or starter.
