Grilled Red Pepper and Tomato Salad Recipe

Origin: Morocco      Period: Traditional

This is a delicious salad from Morocco. Traditionally the red peppers and tomatoes are grilled on a barbecue before being combined into the salad which is typically served as a starter.

Ingredients:

2 large red bell peppers
1 large green bell pepper
4 large, ripe tomatoes
2 garlic cloves, finely chopped
salt and black pepper, to taste
1/4 tsp cumin
pinch of paprika
1 small bunch of parsley, chopped

Grilled Red Pepper and Tomato Salad Preparation:


Method:

Pre-heat your grill then place the peppers and tomatoes (whole) on the grill pan. Grill them, turning occasionally, until evenly charred and blistered then set aside until they can be easily handled.

Peel and discard the skins then remove the cores and seeds. Cut the flesh into strips about 2cm long then place in a bowl. Add the garlic, parsley and seasonings then toss, cover and chill. Serve well chilled.
