Grilled Queen Prawns Recipe

Origin: Zanzibar      Period: Traditional

In the Indian Ocean you get large prawns, called 'Queen Prawns'. These are not really available outside the coast of Africa. But you can substitute Tiger prawns if you wish.

Ingredients

1/2 tsp freshly-grated lime zest
1/2 tsp ground cumin
1/2 tsp oregano
1/2 tsp salt
1/2 tsp green peppercorns (preferably fresh)
2 tbsp olive oil
3 tbsp lime juice
3 fresh garlic cloves, crushed
1 kg shelled and de-veined Queen prawns (or Tiger Prawns)

Grilled Queen Prawns Preparation:


Method:

Mix all the ingredients together to form a marinade and use this to toss the prawns. Place the marinating prawns in the refrigerator for 20 minutes to half an hour.

These are best grilled over charcoal, but you can also fry in a griddle pan. Just remember to keep basting the prawns with the marinade as they cook. They should take about 8 minutes to cook.
