Grilled Herb Schnitzel Recipe

Origin: Germany      Period: Traditional

Ingredients

1 bunch of mixed herbs, chopped
1 small red onion, very finely chopped
2 slices white bread
2 tbsp lemon juice
2 tbsp wine vinegar
4 tbsp olive oil
550g chicken breast fillets
salt and freshly-ground black pepper, to taste


Grilled Herb Schnitzel Preparation:


Method:

Wash the herbs then chop the leaves as finely as you can. Transfer to a bowl and combine with the lemon juice, vinegar and oil. Add the bread slices and allow to soak up the juices and to become soft. Once they are sodden break into small pieces and whisk into the herb mixture.

Slice the chicken fillets lengthways as thinly as you can then place betwen two sheets of clingfilm (plastic wrap) or waxed paper and lightly pound until flat. Season the chicken pieces with salt and black pepper then cook under a pre-heated grill for about 1½ minutes per side.

Arrange the chicken pieces on serving plates and drizzle the herb sauce over the top. Serve immediately.
