Greengage Tart Recipe

Origin: America      Period: Traditional

Ingredients:

225g shortcrust pastry
450g greengages
2 eggs
300ml single cream
1 tbsp caster sugar

Greengage Tart Preparation:


Method:

Roll the pastry on a lightly-floured surface until it's thin enough to line a 20cm lightly-greased flan tin. Line with greaseproof paper, fill with baking beans and bake in an oven pre-heated to 200°C for 15 minutes.

Meanwhile, halve and stone the greengages. Once the pastry is out of the oven, remove the beans and greaseproof paper and arrange the greengages in the flan case.

Beat together the eggs, cream and sugar in a bowl then pour this over the greengages. Return to the oven and bake for about 35 minutes, or until nicely golden.

Serve warm.
