Green Stew Recipe

Origin: Nigeria      Period: Traditional

Ingredients:

1kg beef
2 onions, sliced (1/2 onion chopped, remainder pounded to a paste)
6 green tomatoes, pounded to a paste
10 green chillies, pounded to a paste
6 tbsp palm oil
6 green bell peppers, de-seeded and pounded to a paste
Salt to Taste

Green Stew Preparation:


Method:

Wash the beef and cut into 2cm dice. Add to a pot along with some salt, chopped onion and a little stock. Bring to the boil then simmer for 30 minutes. Meanwhile, heat the oil in a pan and add the tomatoes, chillies, onions and green pepper and fry for 15 minutes.

Add the fried ingredients to the boiling meat, stir to combine and simmer for a further 10 minutes. Remove from the heat and serve on a bed of boiled rice.
