Grapefruit Cake Recipe

Origin: New Zealand      Period: Modern

Ingredients

125g butter
125g sugar
2 eggs
juice and finely grated zest of 1/2 grapefruit
180g flour
1 tbsp baking powder
2 tbsp warm milk

Grapefruit Cake Preparation:


Method:

Cream the butter and sugar together until pale and creamy then add the eggs one at a time, beating well after each addition. Stir-in the juice and zest of the grapefruit then add the flour, baking powder and milk. Pour into a well-greased ring cake tin and place in an oven pre-heated to 150°C. Bake for about 40 minutes until the cake is set.

Take out of the oven, allow to cool slightly then remove from its tin and place on a wire rack. Decorate with icing made from icing sugar, butter and grapefruit juice and zest.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
